Other recipe from here on the South, yesterday was a shining day after the rain.
This recipe of kuchen is with blueberries and the recipe is adapted from one of my friend Rosario (a chilean blogger) .

I talked before about küchen history, when about 1800 the germans arrive here on the South and in this time küchen and others meals begin to be part of Chile cuisine.
Maybe all the cuisines are like this, when arrived the spanish (many years before) they add some things to the meals and the people lived here (mapuche people) had others things, and now we know these food like chilean food, but is all a mix I think we have similars foods with Peru, Argentina, Uruguay and others.
Each country has their own cuisine history and is so good and interesting know about it.

The volcano

Ingredients
(a mold about 28 cm diameter)
dough
180 grams of butter
200 grams all purpose flour
1 teaspoon of baking powder
150 grams sugar
2 eggs
pinch of salt
1/2 teaspoon of vanilla
Filling
250 grams of blueberries or
raspberries (frozen or fresh)
3/4 cup of heavy cream
2 tablespoon of sugar
Streusel
120 grams of butter
150 grams sugar
150 grams of all purpose flour
Method
In a bowl mix the butter and sugar and the pinch of salt, add the flour to make a crumbly mix and then add the egg and vanilla.
Would be a sticky dough.
Butter and floured a mold of 28 cm.
Cover the bottom with the flattered dough and floured fingers(add some flour if is needed)
Preheat oven to 180°c
Cover the crust with blueberries (bury slightly).
Bake until lightly browned.
While mix the cream with the sugar and vanilla.
Once you remove the küchen from oven wait some minutes and spread the cream over the fruits.
Make the streusel
In a bowl put the butter, flour and sugar and make crumbs with your fingers.
And put these crumbs over the cream.
Back to oven with the küchen and bake until is dry and golden(about 20 minutes)
Serve warm or let chill.

Kuchen de arándanos
Villarrica
De aquí siguiendo más al sur la tradición de los kuchenes es fuerte, es un legado de los alemanes cuando llegaron a Chile alrededor del 1800.
Porque es impresionante como los küchen se comen casi a lo largo de todo Chile sobre todo al sur.
Crecí en el sur (Concepción) y allá era lo más normal hacer Küchen, con manzanas, peras, duraznos o frutillas, lo que hubiera. Mi mamá cuando quería aprovechar una manzanas decia voy a hacer un küchen.
Cuando llegaron los españoles, había cosas que no tenían idea y las agregaron a otras comidas que preparaba el pueblo mapuche por ejemplo, todo lo que es con maiz, humitas, pastel de choclo etc.
Incluso hacian el pan con maiz.
Y las frutillas...
Y despues los alemanes con sus recetas que pasaron a ser propias de nosotros.(aqui se venden kuchenes en todas partes)
pero los mejores kuchenes los he comido más al sur, Puerto Varas, valdivia, Frutillar etc.Ayer comí pastel de choclo y de postre kuchen:)
Esta receta está adaptada de una receta de Küchen de mi amiga Rosario que viven en Viña del Mar, que tiene estupendas recetas y además hace clases de cocina.
Su blog se llama Recetas para Todas y se los recomiendo especialmente.
Ingredientes
(para un molde de unos 28 cm de diámetro)
Masa
180 gramos de mantequilla
200 gramos de harina sin polvos de hornear
1 cucharadita de polvos de hornear
150 gramos de azúcar
2 huevos
1 pizca de sal
1/2 cucharadita de vainilla
Relleno
250 gramos de arándanos o frambuesas (frescas o congeladas)
3/4 taza de crema espesa
2 cucharadas de azúcar
streusel
120 gramos de mantequilla
150 gramos de azucar
150 gramos de harina
Preparación
En un bol mezclar la mantequilla, el azúcar y una pizca de sal,
agregar la harina y con los dedos hacer una mezcla arenosa entonces agregar el huevo y la vanilla. Unir todo bien y debe quedar una mezcla un poco pegajosa.
Enmantequillar y enharinar un molde de 28 cm.
Colocar en el fondo la masa bien distribuida.Hacerlo con los dedos enharinados.
Si fuera necesario agregar un poco de harina.
Precalentar el horno a 180° c.
Cubrir la masa con los arándanos distribuyendelos semi enterrados.
Hornear hasta que esté lugeramente dorada la masa (unos 10 minutos)
Mientras mezclar la crema con el azúcar y la vainilla.
Distribuir sobre los arándanos.
Por otro lado hacer el streusel
En un bol mezclar la mantequilla, harina y azúcar haciendo migas con los dedos. Distribuir sobre la crema.
Llevar a horno nuevamente unos 20 mminutos hasta que esté bien dorados.
Servie tibio o frío.
