Mango Pudding

If you know me a little you know I love a lot berries and mango, and always Im thinking different forms to use mangoes, I discover this beatiful dessert in  Eating Well Magazine and really we love this recipe.
Eating well February 2010

The mango is originated from India more than 4.000 years ago and Buddhist monks reportedly brought mangoes from India to eastern Asia. Portugueses traders took mangoes to Brazil and slave traders brought them to Caribbean.(Cortesy from Eating well)

Today mangoes grow in tropical and subtropical climates around the globe.
In Chile we have mangoes to the north.

I have seen in many countries mangos almost all year , like the pineapple and bananas, here we have now and  I used fresh mangos to this recipe but remember you can make with mangos tin  and is really nice.

THE RECIPE
Ingredients (8 servings)
2 envelopes unflavored gelatin
(4 1/2 teaspoon)
1/2 cup water
4 ripe mangos peeled and diced
or a mangoes tin
1 can sweetened condensed milk
3 tablespoon lemon juice
1. Sprinkle gelatin over water in a small bowl, let stand until softened, about 1 minute. Microwave on High, uncovered until the gelatin has completely dissolved but the liquid is not boiling. (10 to 20 segs)
Stir the mixture until smooth.
2. Place mango in a blender or a food processor . Process until smooth.Push through a very fine sieve in a large measuring cup until you have two cups of puree.
Whisk the mango puree, sweetened condensed milk and lemon juice in a medium bowl. Slowly whisk in the softened gelatin mixture until well combined.
3.Lightly coat eight ramekins with cooking spray. Or other silicon molds, I only moist these molds.
Divide the pudding among the molds or ramekins
Refrigerate until set, about two hours.
4. To serve, run a knife around the inside of each mold and then invert and plate  tightly together.
Garnish with some fruits or mint leaves. Keep refrigerate until serve.

4 mangos maduros pelados y trozados

Sweet potato biscuits

Sweet potato is new for me I always see at Supermarket but never try, but I was curious about some recipes I always see, I love them now.
Sweet potatoes are native to the tropical parts of South America, and were domesticated there at least 5000 years ago.
Batatas was between the Yucatán Peninsula of Mexico and the mouth of the Orinoco River in Venezuela. The 'cultigen' had most likely been spread by local people to the Caribbean and South America by 2500 BC. Zhang et al. (1998) provided strong supporting evidence that the geographical zone postulated by Austin is the primary centre of diversity. The much lower molecular diversity found in Peru-Ecuador suggests that this region be considered as secondary centre of sweet potato diversity.

For me sweet potato is similar to pumpkin but different is used a lot in recipes in USA and CANADA.
Here we call Camote and in Spain called batatas.
Mommy talk me Camote was very used many years ago but you know many foods of the past the people dont know.
So I m glad this recipe help to many people use Camote (sweet potato).
